Keto Cinnamon Roll Smoothie: The Killer App For Swerve Brown?
Until the recent release of Swerve Brown, I typically would just add regular old molasses to white erythritol at a ratio of 1 tablespoon of molasses to 1 cup of white erythritol. The amount of sugar added when spread across an entire recipe of baked goods is relatively small. It ends up being similar to the carb count of most brownulated sweetener blends, which typically use something like malt extract. I just prefer to take the superior vitamin and mineral content of molasses in those cases.

What is nice about Swerve Brown is that it does not use malt extract and is still zero net carb. I had switched from Swerve to plain erythritol for most other things, but I now keep Swerve Brown in my pantry for recipes that call for brown sweetener blends, like this Keto Cinnamon Roll Smoothie.
The Ideal Yogurt For Keto Smoothie Making May Surprise You
Ok, ok — I once again am going to try to persuade you to make your own yogurt. It doesn’t matter whether it is using my Sous Vide method with an immersion circulator, using your instant pot, or a dedicated yogurt maker. Homemade yogurt trumps store bought in every way. It has effectively zero sugar, no additives, a higher bacterial count, and tastes better. Why would you not try it?
So, why not Greek? It’s because Fage greek yogurt is the lowest carb yogurt I can find on the market. It is just so thick that it has to be thinned out with other dairy to achieve a blendable consistency. This ends up driving up the carb count with whole milk weighing in at 12g/cup as compared to Fage’s 7g.
In the case of a homemade whole milk yogurt taken to complete fermentation, you would have effectively 0g of carbs. It would barely need to be thinned with whole milk at all. This lets you end up with something still very close to 0g of carbs.
Using Erythritol In Cold Liquids ❄️
One aspect of erythritol-based sweeteners that can make them difficult to work with is their reluctance to dissolve in cold liquids. Since we are dealing with a cold smoothie here, that’s obviously somewhat of a problem.

There are really two good methods to attack this. In this case, we blend the smoothie up thoroughly and then let it rest for a bit in the fridge. This lets the sweetener have a little more time to dissolve before we take it out to re-blend. This approach also gives the Keto Cinnamon Roll Smoothie some more extraction time. This improves the prominence of the cinnamon flavor in the final product.

- 1 cup whole milk greek yogurt (Such as Fage 5% — it’s the best.)
- 3/4 cup whole milk
- 2 tbsp Swerve Brown
- 4 drops stevia glycerite
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 tsp chopped pecans

Instructions

Place everything except the chopped pecans in a blender and blend on high for about a minute. Make sure the milk and yogurt are very cold to start.

You can serve at this point, but this one really benefits from some meld time for the cinnamon and for the sweetener to completely dissolve, as erythritol and erythritol-based blends (like Swerve Brown) are a little reluctant to dissolve readily in cold environments. Recipe Notes
As I stated above, erythritol and erythritol-based sweetener blends are often reluctant to dissolve readily in cold liquids. One strategy is to blend, wait for a bit, and then re-blend to allow some time for it to dissolve. This recipe lends itself to this approach because it allows the cinnamon flavor to extract a bit more and permeate the beverage.
Another method is to run the sweetener through a spice grinder or food processor to pulverize it into dust. This maximizes the surface area and accelerates the dissolving process. Using something like Swerve Confectioners would accomplish the same thing.
