  • 2 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp white wine
  • 1/4 cup extra virgin olive oil
  • 2 tsp powdered erythritol
  • 2 drops stevia glycerite (optional)
  • salt
  • pepper


  • spice grinder (optional)
  • food processor (optional)
  • balloon whisk
  • medium mixing bowl


  1. If your erythritol is not in powdered form to begin with, you can do this in a spice grinder. It can also be done in the small bowl of a food processor, but your batch will have to be larger. It stores perfectly fine in powdered form in a sealed container.

  2. Combine all ingredients in a bowl and whisk until combined. Erythritol does not love to dissolve in cold liquid, so set the bowl aside for 15 minutes and then come back and re-whisk thoroughly to ensure that it has dissolved properly.

  3. If you don't have powdered erythritol on hand and have no way of making it, you can also use a drop or two of stevia glycerite in its place. There is no need to re-whisk with this formulation.

  4. Add salt and pepper to taste, then whisk and serve.
