Smoked Pork Bone Broth
This is a little darker and more mysterious than your typical bone broth. The smoke flavor is faint — it smells and tastes just like cooking sausage.

  1. Clean the celery and roughly chop. Wash, peel, and roughly chop the carrot. Peel and roughly chop the onion and garlic. Then everyone into the pool.
  2. Add the pork bones, tamari soy sauce, and enough water to barely cover the whole thing.
  3. Lid and seal your Instant Pot or other electric pressure cooker and set to two hours or whatever its longest cook duration setting is.
  4. When the cooking completes, wait 15 minutes and then release the pressure to unseal. Strain the contents with a fine mesh strainer and refrigerate if you are not consuming immediately.
  5. If you *are* consuming immediately, try doing what I do — drink it in a mug with two slices of lemon in it. I steep them for about 15 minutes before I drink the bone broth.
Recipe Notes

Of course, you don’t need to use smoked bones for this recipe. Virtually anything would work and be delicious. Adapt to your heart’s content.
