If you’re like me, you roll your eyes and groan evert time you see a recipe that calls for a million things that you have to buy and will never use all of. My pantry is literally full of ingredients like that.

This is a recipe that you would be proud to serve to any guest on any occasion. This despite the fact that you almost certainly have everything you need for it in your house right now. We all need more recipes like that. Hopefully it will find a place in your repertoire due to its simplicity and utility.

What Is The Best Salad Dressing For Low Carb?

The simple answer to this question is that most salad dressing without added sugar is going to be keto friendly. You’ll find that virtually anything you purchase in the grocery store is going to have at least some added sugar .

An additional boogeyman is that some salad dressings marketed as “low carb” or “sugar free” are packed with cheap synthetic sweeteners that cause problems for keto and low carb dieters by raising your insulin.

You’ll find that the least expensive way to eat well is to just make things yourself. I make all my own salad dressings and use natural sweeteners like erythritol and stevia when I feel they are needed. After a while, your tastes will adjust and you may not need them at all.

Is Vinegar OK For Keto?

The short answer is: yes. Most “plain” vinegar varieties are ok for keto. By this I mean varieties like regular white vinegar, wine vinegars, rice vinegar, and some apple cider vinegar. Balsamic vinegar does have some sugar, so portion control is important if you are going to use it.

Where you can get yourself into trouble is with fancy, artisanal varieties. This is particular true with “sweet” flavors like fruit vinegars. It’s aways good keto diet advice to read labels very carefully and exercise portion control where it is necessary.

A great way to squelch a fruit craving on your salad is to use a dressing that uses apple cider vinegar. You get a little bit of the apple taste without the carbs. Apples are a notoriously bad fruit for pesticides, so I absorb the additional expense in this case and go organic with Bragg’s Apple Cider Vinegar for my White Wine Vinaigrette Salad Dressing.

Can I Use Sweeteners In Salad Dressings?

Yes, you can! However, the problem with a lot of synthetic sweeteners is that they also draw an insulin response like sugar. I personally stick with naturally-derived sweeteners like erythritol and stevia in my homemade salad dressings.

As I’ve talked about on other posts on this site, erythritol is resistant to dissolving in cold liquids. My go-to method for getting around this is to boost its surface area by powdering it in a spice grinder or food processor. If you don’t own either or have time for this step, there are powdered varieties available. This is an approach I have used before on this website, such as with my Texas Keto BBQ Sauce.

A quicker and easier way of sweetening your white wine vinaigrette salad dressing is with liquid stevia. It dissolves far more rapidly than powdered erythritol and only requires a few drops. I use liquid stevia glycerite, which lacks a lot of the bitterness of other preparations that people find off-putting.

  • 2 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp white wine
  • 1/4 cup extra virgin olive oil
  • 2 tsp powdered erythritol
  • 2 drops stevia glycerite (optional)
  • salt
  • pepper

Equipment

  • spice grinder (optional)
  • food processor (optional)
  • balloon whisk
  • medium mixing bowl

Instructions

  1. If your erythritol is not in powdered form to begin with, you can do this in a spice grinder. It can also be done in the small bowl of a food processor, but your batch will have to be larger. It stores perfectly fine in powdered form in a sealed container.

  2. Combine all ingredients in a bowl and whisk until combined. Erythritol does not love to dissolve in cold liquid, so set the bowl aside for 15 minutes and then come back and re-whisk thoroughly to ensure that it has dissolved properly.

  3. If you don’t have powdered erythritol on hand and have no way of making it, you can also use a drop or two of stevia glycerite in its place. There is no need to re-whisk with this formulation.

  4. Add salt and pepper to taste, then whisk and serve.
